This vinegar by Chosanjung Co., Ltd., a traditional vinegar company in South Korea that started in 1946,has a golden orange hue and nectar-like consistency. It’s made with just two simple ingredients—tangerine and traditional yeast—yet is complex in flavor. Made purely from Tangerines (aka Jeju mandarins) from Jeju Island in South Korea, the tangerines that are picked fresh, crushed to be juiced and boiled in a cauldron. They are further fermented using traditional methods by concentrating the syrup again through evaporation of moisture in traditional Korean pottery jars for more than half a year. The concentrated vinegar has a sugar content of 50 Brix and an acidity of ph 5 or more, making it a deliciously sweet and sour yellow mandarin vinegar. The vinegar is refreshingly citrusy, with a light effervescence and sweetness. And while it’s lovely in marinades and salads, we recommend treating like a shrub and adding a splash soda water to truly let the flavor shine on its own—it’s that good.
