The 68% Dark bar from Silver Street Chocolate uses cacao beans exported and processed by Latitude Trading Co (LTC) in Uganda. This Co-Op organises 6 collection points for farmers from rural areas to access. Fresh cacao is traded weekly and farmers are paid up-front for their harvest.
LTC's centralised fermentation facility and warehouse is located in the village of Bumate, at the base of the hills leading into the mountains. The site was designed to capture as much sunlight as possible while limiting runoff from heavy rainfall allowing the beans to be sun dried over a 5-6 day period.
Silver Street Chocolate uses transparently sourced cacao that is binded and refined by hand in small batches here in Sydney.
