Produced by Ito Shokuhin in Shizuoka, Aiko Chan Japanese Sardines in Soy Sauce are made with Japanese-caught iwashi selected for their rich, tender flesh. The fish are gently simmered with just two seasonings: Japanese whole-soybean soy sauce and Hokkaido beet sugar, allowing the natural richness of the fish to remain central to the dish. No chemical seasonings are used.

The preparation is distinctly Japanese in character, with a gently sweet soy sauce seasoning that works its way through the tender fish as it cooks. The Hokkaido beet sugar rounds out the savouriness of the soy, while the natural richness of the fish gives the sauce greater depth. The finished texture as exceptionally soft and almost melting while the taste is clean and distinctly home-style.
