The Small Batch range allows Wellington Apiary to showcase rare and unusual honey varieties from across Tasmania. This limited release of fennel honey has been produced from hives on the east coast of Tasmania near Bicheno. The small batch range reflects the irregular flowering of certain local flora species which have been harvested on a small scale.
Tasting notes: Dark brown in colour with a strong aroma of liquorice and aniseed. Fennel honey pairs well with cheese and works with meat marinades.
