The Wakatame Matcha from Marukyu Koyamaen is a limited supply culinary matcha. A favourite of ours, this matcha starts off with a bold green and bitter flavour with lower astringency levels than the Rindo. As this tea settles in the mouth, a pleasant sweetness with hints of citrus emerges before ending with a warm, savoury umami note. The fragrance of this matcha is floral, slightly herbaceous with a yuzu-like citrus brightness. Thanks to this complexity of flavours and deep green colour, this beautiful all-rounder bridges the gap between the culinary and ceremonial grade matcha allowing it be used in baked goods, patisserie, ice creams, matcha lattes but holds its own equally as a matcha tea
