The Yugen matcha from Marukyu Koyamaen is an emerald green powder with a bright grassy fragrance along with nutty notes. The flavour of this matcha is soft and creamy at the start, dominated by an earthy sweetness similar to cacao. A few sips in, more assertive bright, vegetal flavours show through along with a savoury nuttiness. Astringency levels are fairly low on this blend. A mild bitterness and waves of tartness come through at the end. It has a more assertive matcha taste than Aoarashi and more depth and a sophisticated profile compared to the Isuzu. Thanks to the intense green of this flavour, this matcha is favoured for its ability to hold its colour in baked goods. The multitudes of flavour layers makes for a good blend when drinking as a matcha latte and also for those who enjoy a richer matcha.
Ceremonial matcha are graded by the most revered 'Chasi' or tea masters in Japan and given their respective poetic names derived from the essence of the tea by these masters. Water Temperature: Best brewed at 75ºC. Straining this blend is recommended as it takes a while to whisk. Allow to sit for a minute or 2 for the aroma and flavours to open.
