The sodas are bottled on site at the PS40 bar, where everything is made and prepared from scratch – from peeling and juicing lemons to toasting wattleseeds. The core series features flavours like Wattle Cola (wattle seeds, kola nut, cinnamon, star anise, nutmeg, lavender, coriander seeds, vanilla, cane sugar and lemon, lime and orange zests), Bush Tonic (lemon myrtle, native lemongrass, lemon and lime zests, quinine and white sugar) and the Smoked Lemonade, a collaboration with popular Sydney establishment LP’s Quality Meats, which uses smoked water, lemon and lime juices and zests, rosemary and Murray River salt.
