Produced on Awaji Island in Hyogo Prefecture, Awajishima no Moshio is a distinctive Japanese sea salt made by Tada Philosophy using Awaji Island seawater and Japanese seaweed. Moshio has deep roots in Japan's salt-making history, with references to salt made in association with seaweed appearing in some of the country's earliest poetry and literature.
Tada Philosophy has produced Awajishima no Moshio since 1999, drawing on this older salt-making tradition while adapting production to contemporary food standards. For this Premium moshio, seawater and seaweed are carefully cooked over approximately four days, concentrating the character of both ingredients and producing its naturally pale brown colour.
The seaweed contributes gentle savouriness rather than an overt seaweed flavour. Tada describes the salt as
maroyaka, or mellow and rounded, with less of the sharp, angular salinity associated with conventional salt. Subtle sweetness follows, together with a lingering umami character that gives Moshio considerable depth without overwhelming the ingredient it seasons.
That combination makes it particularly effective as a finishing salt. Sprinkle over sashimi, grilled fish, tempura or chilled tofu; use over freshly steamed Japanese short-grain rice and onigiri; or finish eggs, tomatoes, mushrooms and steamed vegetables. Its savoury depth also works particularly well with grilled beef, chicken and pork.
Its complex umami also gives Moshio an interesting place in sweets. Used sparingly, it can temper overt sweetness while bringing greater depth to caramel, dark chocolate, black sesame, anko, kinako, chestnut and sweet potato desserts. It is particularly good with browned flavours such as butterscotch, brown butter cakes and financiers, where its mellow salinity and savoury character become part of the flavour rather than simply providing a salty contrast.
