Yomo no Kaori matcha from Yamamasa Koyamaen is a standout for those who appreciate bolder, dominant green aromas from their matcha as the Yomo no Kaori has a deep leafy green and savoury scent similar to spinach or seaweed. Alongside this deep green aroma, you'll get slight fruity hints of plum while bursts of caramel and toasted almonds pop through as well making this one of the most intriguingly aromatic matchas in our offering. Despite it's strong green aroma, this tea opens with a soft green flavour and savoury umami followed by a lovely floral and citrus aroma that peeks through (think blossoms and white citrus flowers) in the drink. This matcha has low astringency levels and almost no bitterness even at the end.
Yamamasa Koyamaen's long history dates back to the 1600s as tea growers and is today respected for their enduring contributions to Japan's tea industry. They believe that producing consistent, high quality tea starts from the growing stage, an ethos that has been passed down for generations since the company started selling their tea in 1861. Maintaining time honoured traditions, their tea craftsmen still grind their matcha powder using stone disks. This labour intensive method requires a highly trained artisan to grind the leaves at a certain speed at all times so the leaves don't burn or ground unevenly.
