Tokunaga Seicha is a 3rd generation tea producer from Ureshino in the western part of Saga prefecture on Kyushu island. Ureshino tea differs from most Japanese green tea as their tea is classed as Tamaryoku-cha because of the round shape of the tea leaves. Tokunaga Seicha use the Kaimairi-sei method - harvested tea leaves are heated in a pan to prevent oxidation, giving their tea deep flavours. Their meticulous steaming and roasting process is overseen by experienced masters who work with the tea in small quantities and by hand as it requires careful monitoring throughout the whole process. Even a 0.1 degree shift in temperature could result in a completely different tea. The matcha we've selected from them is a soft green powder with a sweet, nutty aroma. When whisked, the liquid is a rich green. This is a strong, punchy matcha with the concentration of its intense umami and highly pronounced vegetal notes greeting you right at the start. Expect a fair whack of bitterness that tapers off with some lingering astringency and a gentle natural sweetness when whisked for traditional drinking. Once milk is added, the boldness and rich vegetal notes are retained. This is must try if you're seeking a matcha powder with hutzpah.
Serving Recommendations
Usucha (Thin Tea) Recommended amount per cup: 2g (sift for a smoother, delicate consistency). For matcha lattes: 3g for a standard latte and 4g for a strong latter.
