Founded in 1950, Shinmei Co is one of the largest producers of rice in Japan. Their Uonuma Koshihikari is regarded as the industry standard and is harvested in the Uonuma area of Niigata Prefecture - Japan's top rice-producing region.
Due to the ideal growing conditions in Niigata, where the temperature difference between day and night is large and the melted snow from the mountains provides crisp spring water needed to produce good rice, this superior quality rice has a particularly fragrant, subtly savoury taste and fluffy, chewy texture when cooked.
