Olasagasti traces its origins to 1923, when Sicilian entrepreneur Salvatore Orlando established fish preserving operations along Spain's Basque coast. Bringing generations of Mediterranean preserving knowledge to the Cantabrian Sea, the family helped shape the region's conservas tradition while specialising in premium tuna, anchovies and other blue fish.

Today, production continues in Markina, just inland from the fishing ports of Ondarroa and Bermeo, where fish landed from the Bay of Biscay are prepared fresh rather than frozen. Traditional hand preparation remains central to the company's philosophy, combining skilled craftsmanship with modern quality standards to preserve the integrity of every fish.

Bonito del Norte remains Olasagasti's signature product. Caught individually by rod and line during the seasonal fishery, it reflects the company's commitment to sustainable fishing, traditional preparation and the exceptional quality of the Cantabrian Sea.
