Fermented Blueberry Jam

Want a classic Blueberry that does not taste one-dimensional and overly sweet? Condimental rolls their blueberries in fermented yuzu puree to let them ferment for a few days before cooking them into a jam.

This process helped to coax out more complex and intense flavours from the berries (as well as their pectin), convert some of the fruit’s natural sugars into acids while infusing the citrusy top notes of yuzu. Then, when it came time to cook, a big scoop of Teacraft's infused ‘Iron Goddess’ Oolong tea adds a touch of tannins and ‘base note’ flavours.

The result is a blueberry jam with a gentle twist, with a bit more going on in the flavour department. Enjoy!
