Dominican Republic 53% Dark Milk

Made in Sydney by Silver Street Chocolate, the team have taken their expertise in coffee roasting and applied it to roasting their cacao. From sourcing small producers and farms to work with to the precision and sensory awareness required to extract the best flavours from their cacao, each step is a pursuit of raising awareness to fair trade cacao and the diligent work of the producers in each region.

This bar uses Öko Caribe cacao from the Duarte Province of the Dominican Republic, sourced from a network of 165 local farmers committed to responsible cultivation and transparent pricing. The beans are centrally fermented in wooden boxes and finished through a two-stage drying process between March and June.

For the milk-chocolate lover: still a little dark, never over-processed. Smooth and rounded with notes ofcranberry, toffee, and nutmeg.
