Kushino Farm’s Green Yuzu Kosho is made by salting and naturally fermenting fresh yuzu peel and green chillies separately for one year. The two are then finely ground and blended with salt to create a bright, aromatic paste with citrus freshness, gentle heat, and clean salinity.

Rooted in Kyushu home cooking, this traditional condiment is used sparingly to lift and sharpen flavour rather than dominate a dish.

Add to grilled meats, seafood, and hot pot, stir into ramen noodles or soups, or mix into mayonnaise, dressings, and dipping sauces for a fresh citrus-spice finish.

A sharp, citrus heat used by the spoon-tip, not the spoon. A small amount is enough to bring freshness, heat, and clarity to everyday cooking.

 

 

Kushino Farm (Kushino Nouen), based in Oita Prefecture, Japan, is a renowned, family-run producer specializing in organic yuzu citrus and high-quality Yuzu Kosho. Starting with only two trees over 40 years ago, the farm has expanded to cultivate over 1,000 trees using traditional, sustainable methods in the "Village of Yuzu".
