Kushino Farm (Kushino Nouen), based in Oita Prefecture, Japan, is a renowned, family-run producer specializing in organic yuzu citrus and high-quality Yuzu Kosho. Starting with only two trees over 40 years ago, the farm has expanded to cultivate over 1,000 trees using traditional, sustainable methods in the "Village of Yuzu".
Kushino Farm's Green Yuzu Kosho is made by salting and fermenting yuzu peel and chillis seperately for a year. The two ingredients are gently ground using no heat and blended together with salt to create this bright, salty, spicy and citrusy condiment.
