A distinctive dark sugar from Hateruma Island in the Okinawan archipelago, Okinawa Brown Sugar (kokuto) is naturally rich in minerals and antioxidants. It is made traditionally by simply boiling raw sugar cane juice. This unrefined sugar retains its deep caramel flavour, earthy mineral tones, and subtle savoury complexity.
Hateruma Island is a small and remote island and the southernmost inhabited island of Japan. Known for its pristine turquoise waters, white sandy beaches, and subtropicalclimate, the island provides ideal conditions for cultivating high-quality sugarcane. The mineral-rich soils and unique terroir contribute to the distinct depth offlavour in Hateruma’s brown sugar.
