Banksia Honey - Limited Release

The Banksia honey from Wellington Apiary is harvested from hives in the Tasmanian East Coast by Freycinet National Park and is a limited 80 bottle release as part of their Small Batch range. This series allows Wellington Apiary to showcase rare and unusual honey varieties from across Tasmania. Due to the irregular flowering of certain local flora species the honey harvested can only be done on a small scale.

Tasting notes: This honey has a deep amber colour and a thick, creamed consistency. This honey is a rich butterscotch-like flavour.

Wellington Apiary's cold extracts their honey, maximising it's natural goodness whilst capturing intense flavours. This honey is raw, untreated and coarse filtered.

Wellington Apiary was established in 2009 by Antonia and Robin O’Brien, with a focus on producing honey that reflects the native flora of Hobart and surrounding Tasmanian landscapes.

All Wellington Apiary honey is cold extracted and never heated during extraction or bottling. It is coarse filtered to retain natural pollen, flavour, and aroma, resulting in pure raw Tasmanian honey as the bees intended.

Tasmania is one of the few regions globally where chemical treatment of hives is not required. The island remains free from Varroa mite and small hive beetle, meaning bees are not exposed to miticides or pesticides commonly used elsewhere.

In addition to their own hives, Antonia and Robin work closely with a small network of like-minded Tasmanian beekeepers. This collaboration supports the local beekeeping industry and allows access to rare and seasonal honey and honeycomb varieties unique to the region.
