Yuki Tsubaki Koshihikari is an exceptionally rare rice grown in the snow country of Uonuma, Niigata — widely regarded as Japan’s finest rice region.

Produced in extremely limited quantities, this rice is cultivated using mineral rich glacier water and traditional soil preparation methods that prioritise flavour over yield. After harvest, the grains are carefully dried and slowly polished at a reduced speed to preserve their natural character and sheen.

The result is uniform, glossy rice with a gentle fragrance, natural sweetness, and a soft, slightly springy texture. Designed to be the centre of the meal, it pairs best with simple accompaniments that allow the flavour of the rice to stand on its own. 

Dubbed the ‘rice that chefs choose’, this rice is best prepared in a rice cooker or heavy pot and served with grilled fish, vegetables, miso based dishes, or pickles.

Yuki Tsubaki is an ultra-premium, rare Koshihikari rice brand from Niigata, Japan, produced in the Uonuma region. Known for its exceptional quality, it constitutes less than 0.003% of total Uonuma Koshihikari production. The rice is cultivated using nutrient-rich, cold snowmelt water and has earned multiple gold prizes at international taste evaluations for its superior texture and sweetness.

Regarded as the ‘finest Koshihikari rice,’ it is highly sought after by Michelin-starred chefs for sushi and fine dining.
