Malfroy’s Gold Wild Yellow Box Honey is a classic Australian eucalypt honey gathered from Warré hive apiaries located across the elevated landscapes of the Central Tablelands of New South Wales.

Produced from natural comb at altitudes of 700 to 1000 metres, this honey reflects the rugged climate of the region where scorching summers, cold winters and highly variable rainfall shape the flowering cycles of the surrounding forests.

When the Yellow Box tree (Eucalyptus melliodora) comes into bloom, it produces a beautifully aromatic nectar that yields one of Australia’s most prized honeys.

In its pure form this honey has a soft hay yellow colour with a full body and characteristic sweet floral flavour, finishing with clean lingering high notes.

This batch has been independently tested with an activity rating of TA 25+ (equivalent to UMF 25+ / MGO 1200+).

Yellow Box honey is also known for having one of the lowest GI ratings of any Australian honey (GI 35).

As this honey is cold pressed directly from virgin comb, it may naturally crystallise in the jar. Cold pressed honey often appears cloudy or opaque and develops a soft, thick texture with finely grained crystals.

Malfroy’s Gold is an Australian family beekeeping operation based in the Blue Mountains of New South Wales. Their apiaries are located across the rugged landscapes of the World Heritage listed Greater Blue Mountains region, where ancient eucalypt forests and diverse wildflower ecosystems provide exceptional nectar sources for their bees.

This protected wilderness spans more than one million hectares and rises from sea level to over 1000 metres in altitude. The region is botanically rich, with more than 1,500 flowering plant species recorded and over 13 percent of the world’s eucalypt species occurring naturally within its forests.

Bees from each colony forage widely across woodland, open forest, rainforest edges, heathland, swamplands and stream valleys. Because of this broad foraging range, the honey produced here reflects the wider landscape rather than a single flowering source.

Each harvest captures the changing character of the Blue Mountains environment, making every batch subtly different in flavour and aroma.

Raw Warré Hive Honey

This honey is produced using Warré hives and minimal intervention beekeeping methods.

Wild honeys from Warré hives may naturally contain:

• bee bread (pollen fermented by beneficial bacteria)

• propolis

• naturally occurring pollen

These components contribute to the honey’s complex flavour profile and natural antioxidant properties.

In rare cases, pollen may trigger allergic reactions in sensitive individuals.

Storage and Natural Variation

Store in a cool, dry and dark place.

Ideal storage temperature is 15 to 25°C.

Because this honey is wild harvested, minimally processed and bottled in small batches, natural variation in colour, texture and pollen richness will occur between harvests.

The honey may gradually set or crystallise over time. This is a natural characteristic of raw honey and does not affect its quality.

Yellow Box Flowering

Yellow Box (Eucalyptus melliodora) is one of Australia’s most valued honey producing eucalypts.

These trees typically flower every two to four years during the hot summer months when climatic conditions allow strong nectar flows. When the flowering season peaks, the tablelands are filled with the distinctive sweet perfume of Yellow Box blossom.

The resulting honey is prized for its balanced sweetness, delicate floral aroma and clean, lingering finish.
