Condimental’s Citrus and Sake Marmalade returns after its standout debut in 2022. This batch brings together some of Australia’s best citrus. Calamansi limes, ruby grapefruit and navel oranges form the base, softened overnight in a generous bath of Ine Mankai Red Rice Sake.
The result is a marmalade with depth. Bright citrus lifted by a savoury, rounded undertone from the sake, giving each spoonful a full and layered finish.
Use it to glaze duck or roast meats, fold through dressings, or spread on a buttered crumpet with a light pinch of flaky salt.
