Aiko Chan Gin no Maguro Mizuni is a premium Japanese canned tuna produced by Ito Shokuhin in Shizuoka Prefecture. Unlike conventional canned tuna packed in oil or heavily seasoned brine, it is gently cooked and preserved in a clear vegetable broth, allowing the natural flavour and texture of the fish to remain at the forefront.
Using carefully selected yellowfin or bigeye tuna, the fish is hand-flaked into generous pieces before being packed in a broth slowly prepared from onion, carrot and cabbage, with roasted onion adding gentle sweetness and depth. With no added oil, the result is remarkably clean, light and balanced, highlighting the delicate flavour of the tuna rather than masking it.
Founded in Shizuoka, one of Japan's historic seafood processing regions, Ito Shokuhin has built its reputation around producing additive-conscious canned seafood under the Aiko Chan brand. Rather than relying on heavy seasoning, the company focuses on careful ingredient selection and straightforward recipes that allow the quality of the fish to speak for itself.
No oil. No unnecessary seasoning. Just carefully prepared tuna in a gently flavoured vegetable broth.
