Bonito Del Norte in Olive Oil

Dispatched from Sydney within 1–2 business days. Tracked with signature on delivery.

Produced by Olasagasti on Spain's Basque coast, Bonito del Norte is prepared from albacore tuna (Thunnus alalunga), the most prized tuna species in Spanish gastronomy. Each fish is individually caught by rod and line in the Bay of Biscay during the seasonal fishing campaign before being prepared fresh and packed by hand in olive oil.

Unlike conventional canned tuna, Bonito del Norte is celebrated for its pale blush flesh, firm yet silky texture and naturally delicate flavour. Olasagasti prepares the fish entirely by hand, preserving the integrity of each loin before covering it with olive oil that protects rather than masks its character.

Rich without being heavy, it has a clean, almost buttery finish with gentle savouriness and remarkable succulence. This is a tuna intended to be enjoyed in generous flakes rather than stirred into mayonnaise, allowing its texture and flavour to remain the focus.

Olasagasti traces its origins to 1923, when Sicilian entrepreneur Salvatore Orlando established fish preserving operations along Spain's Basque coast. Bringing generations of Mediterranean preserving knowledge to the Cantabrian Sea, the family helped shape the region's conservas tradition while specialising in premium tuna, anchovies and other blue fish.

Today, production continues in Markina, just inland from the fishing ports of Ondarroa and Bermeo, where fish landed from the Bay of Biscay are prepared fresh rather than frozen. Traditional hand preparation remains central to the company's philosophy, combining skilled craftsmanship with modern quality standards to preserve the integrity of every fish.

Bonito del Norte remains Olasagasti's signature product. Caught individually by rod and line during the seasonal fishery, it reflects the company's commitment to sustainable fishing, traditional preparation and the exceptional quality of the Cantabrian Sea.
