Founded in 1902 in Saitama Prefecture, Yamaki Jozo has spent more than a century producing organic soy sauce, miso and tofu using traditional fermentation methods. Made with natural spring water and 100% Japanese-grown ingredients, the family-run producer is recognised for its long-aged brewing and commitment to organic production.

This ponzu begins with Yamaki Jozo's organic shoyu before being blended with sake, mirin, rice vinegar, kombu, bonito and a selection of Japanese citrus including yuzu, sudachi, yuko and daidai. The result is bright and aromatic, with layered citrus, clean umami and a balanced acidity that enhances rather than masks a dish.

Recommended Uses

  • As a dipping sauce for dumplings, sashimi and cold soba
  • Drizzle over tofu, steamed vegetables, oysters or grilled fish
  • Combine with olive oil for a vibrant dressing
  • Mix with goma dressing, add chopped coriander and spring onion, toasted sesame seeds and chilli oil to create a dip for hotpot
  • It also makes an excellent alternative to soy sauce whenever a dish benefits from added freshness and lift

Founded in 1902, in Saitama Prefecture, Japan, Yamaki Jozo is a family-run producer specializing in traditional, organic miso, soy sauce, and tofu. Known for using natural spring water and 100% Japanese-grown ingredients, the company emphasizes sustainable, chemical-free, and long-aged fermentation methods.

Around 40 years ago, current president Tomio Kitani transitioned the company to use 100% organic soybeans, inspired by natural farming methods and the organic direction has been at the forefront of its production philosophy at the company.

Ingredients:

Organic soy sauce (water, organic soybeans, organic wheat, salt, koji spore), organic rice vinegar, organic yuu juice (organic yuzu, sudachi, yuko, daidai), hon-mirin, bonito extract, kelp extract, dried bonito, oligosaccharide, salt

Perfect as a dumpling dip, or as a dipping sauce for cold soba noodles, sashimi or carpaccio, steamed vegetables, mixed salads, oysters and grilled meats.

Mix it 50/50 with a nice green fruity olive oil for a rich salad dressing.
