Produced from traditional Warré hives using minimally invasive beekeeping methods, this seasonal polyflora honey is cold pressed directly from virgin comb to preserve its natural flavour, texture and nutritional integrity. Rather than being heavily filtered or homogenised, it retains naturally occurring pollen, bee bread and propolis, remaining as close as possible to the way it exists inside the hive.

Each harvest reflects the changing flora available to the bees, producing a honey with remarkable depth and complexity. No two batches are exactly alike, making every jar a genuine expression of the season.

Harvest Profile
The current 2026 harvest presents as a soft set honey with a smooth, finely crystallised texture and a light amber to golden colour. On the palate it offers delicate floral aromatics followed by layered wildflower complexity and a long, balanced finish.

Why Warré Hives?
This honey is produced using traditional Warré hives, a natural beekeeping system that allows bees to build their own comb with minimal intervention. Cold pressing the honey directly from virgin comb helps preserve naturally occurring:

• Bee bread (beneficial fermented pollen)
• Propolis
• Naturally occurring pollen
• Native enzymes and aromatic compounds

These components contribute to the honey's distinctive flavour, texture and naturally occurring antioxidant activity.

Natural Characteristics

Storage

Malfroy’s Gold is an Australian family beekeeping operation based in the Blue Mountains of New South Wales. Their apiaries are located across the rugged landscapes of the World Heritage listed Greater Blue Mountains region, where ancient eucalypt forests and diverse wildflower ecosystems provide extraordinary nectar sources for their bees.

This protected wilderness spans more than one million hectares and rises from sea level to over 1000 metres in altitude. The region is botanically rich, with more than 1,500 flowering plant species recorded and over 13 percent of the world’s eucalypt species occurring naturally within its forests.

Bees from each colony forage widely across woodland, open forest, rainforest edges, heathland, swamplands and stream valleys. Because of this broad foraging range, the honey produced here reflects the wider landscape rather than a single flowering source.

Each harvest captures the changing character of the Blue Mountains environment, making every batch subtly different in flavour and aroma.

Raw Warré Hive Honey

This honey is produced using Warré hives and minimal intervention methods.

Wild honeys from Warré hives may naturally contain:

• Bee bread (pollen fermented by beneficial bacteria)

• Propolis

• Naturally occurring pollen

These components contribute to the honey’s distinctive flavour and natural antioxidant activity.

In rare cases, pollen may trigger allergic reactions in sensitive individuals.

Storage and Natural Variation

Store in a cool, dry, dark place.

Ideal storage temperature is between 15 and 25°C.

Because this honey is wild harvested, minimally processed and bottled in micro batches, natural variation in colour, texture and pollen richness will occur between batches.

Malfroy’s Gold does not overheat, filter or homogenise their honey to standardise appearance, as these processes can damage flavour and nutritional integrity.
