From carefully placed hives amidst Tasmania’s seasonal blossoms, bees gather nectar from blooming lavender as part of their daily forage. The result is a honey that carries the delicate essence of lavender—light and floral with a soft, aromatic sweetness that feels refined yet unmistakably natural. Unlike other varieties, this Lavender honey showcases a gentle floral perfume and smooth sweetness that is both soothing and vibrant, evolving slightly with each season’s bloom.

Tasting notes: Pale golden to light amber in colour with an inviting floral aroma that reflects the lavender fields in flower. The flavour is softly sweet with subtle botanical depth and aromatic lift, making it a beautiful complement to herbal teas, creamy yoghurts, mild cheeses or simply drizzled over warm scones and pastries. Its delicate profile also works wonderfully as a finishing touch for light desserts or salad dressings, adding subtle complexity without overpowering other flavours.

Wellington Apiary was established in 2009 by Antonia and Robin O’Brien, with a focus on producing honey that reflects the native flora of Hobart and surrounding Tasmanian landscapes.

All Wellington Apiary honey is cold extracted and never heated during extraction or bottling. It is coarse filtered to retain natural pollen, flavour, and aroma, resulting in pure raw Tasmanian honey as the bees intended.

Tasmania is one of the few regions globally where chemical treatment of hives is not required. The island remains free from Varroa mite and small hive beetle, meaning bees are not exposed to miticides or pesticides commonly used elsewhere.

In addition to their own hives, Antonia and Robin work closely with a small network of like-minded Tasmanian beekeepers. This collaboration supports the local beekeeping industry and allows access to rare and seasonal honey and honeycomb varieties unique to the region.
