Prickly Box Honey

The Prickly box (Bursaria spinose) is native to Tasmania, producing small, white, scented flowers during summer. Bees access the Prickly Box nectar on the warm hills in southern Tasmania’s Coal River Valley. Drought can seriously affect the Prickly Box honey flow, and this sought after honey is highly seasonal due to this.

Tasting notes: The honey produced is golden, bright yellow in colour with a flavour ranging from nutty caramel. This honey is less sweet than most, cleansing the palette with little after taste. It is perfect accompanying cheese platters, sweetening tea or coffee and smothered over buttered toast.

Wellington Apiary was established in 2009 by Antonia and Robin O’Brien, with a focus on producing honey that reflects the native flora of Hobart and surrounding Tasmanian landscapes.

All Wellington Apiary honey is cold extracted and never heated during extraction or bottling. It is coarse filtered to retain natural pollen, flavour, and aroma, resulting in pure raw Tasmanian honey as the bees intended.

Tasmania is one of the few regions globally where chemical treatment of hives is not required. The island remains free from Varroa mite and small hive beetle, meaning bees are not exposed to miticides or pesticides commonly used elsewhere.

In addition to their own hives, Antonia and Robin work closely with a small network of like-minded Tasmanian beekeepers. This collaboration supports the local beekeeping industry and allows access to rare and seasonal honey and honeycomb varieties unique to the region.
