Brewed using only organic whole soybeans, organic wheat and sea salt, this traditional shoyu is naturally fermented over several weeks to develop depth, balance and clarity.

The flavour is rounded and refined, with clean umami, gentle salinity and subtle sweetness lifted by light citrus notes. Versatile and well structured, it works across everyday cooking and finishing, from sashimi and steamed vegetables to marinades, braising and dressings.
