Based in Oita Prefecture, Kushino Farm is a family-run grower specialising in yuzu. What began with two trees more than four decades ago has grown into an orchard of over 1,000 trees, cultivated using traditional methods in one of Japan's best known yuzu-growing regions.
Its Green Yuzu Kosho is made by salting and naturally fermenting fresh yuzu peel and green chillies separately for a full year before they are gently ground without heat and blended together. This slow process preserves the fragrance of the citrus while allowing the chilli and salt to develop depth and complexity.
Bright, savoury and intensely aromatic, it delivers fresh yuzu perfume first, followed by gentle chilli heat and a clean, lingering salinity. Used sparingly, it sharpens and lifts flavours rather than overwhelming them.
Recommended Uses
- Serve alongside grilled beef, pork, chicken or seafood
- Stir through ramen, udon or hot pots
- Fold into mayonnaise for sandwiches or fried chicken
- Whisk into vinaigrettes
- Boost the flavour with a small amount to sashimi, oysters, tofu, grilled vegetables or roasted mushrooms
- It is equally at home stirred through butter for grilled corn or seafood
- Mixed into yoghurt or crème fraîche as a dip
