Founded in 1873 in Tatebayashi, Gunma Prefecture, Shoda is one of Japan's longest established soy sauce brewers. Combining traditional fermentation with more than 150 years of technical expertise, the company continues to produce naturally brewed soy sauces alongside specialist seasonings for both professional kitchens and home cooks.

This organic shoyu is brewed from organic whole soybeans, organic wheat and sea salt, then naturally fermented to develop balance, depth and complexity. The result is a soy sauce that is clean and well rounded rather than aggressively salty, making it suitable as both a finishing seasoning and an everyday cooking soy.

Expect a full-bodied aroma of roasted soy and wheat, followed by layered umami, gentle sweetness and a rounded salinity that lingers without harshness. It seasons with precision, adding savoury depth while allowing the flavour of the ingredients themselves to remain clear.

Recommended Uses

  • Keep it within easy reach rather than reserving it for special occasions
  • Use it with sashimi and sushi, steamed fish, tofu, eggs, rice and congee, dumplings, noodles, grilled vegetables and mushrooms, stir fries, fried rice, braised dishes and marinades.
  • It also brings balance to dipping sauces, vinaigrettes and noodle broths, and a few drops can deepen soups, stews and pasta sauces without making them taste overtly of soy.
  • Use it for a master stock or add to braising liquids
