Produced by Olasagasti on Spain's Basque coast, these Cantabrian anchovy fillets are prepared from spring-caught European anchovies, considered the finest catch of the season for their size, texture and fat content. After landing, the fish are traditionally salt-cured and matured for several months before each fillet is carefully cleaned and packed by hand in olive oil.

This slow maturation develops remarkable depth of flavour while transforming the texture into something far more refined than everyday anchovies. Firm yet delicate, the fillets deliver concentrated savouriness balanced by natural sweetness, rounded richness and a long, clean finish. The olive oil softens the salinity, allowing the complexity of the anchovies to remain the focus.

Olasagasti traces its origins to 1923, when Sicilian entrepreneur Salvatore Orlando established fish preserving operations along Spain's Basque coast. Bringing generations of Mediterranean preserving knowledge to the Cantabrian Sea, the family helped shape the region's conservas tradition while specialising in premium tuna, anchovies and other blue fish.

Today, production continues in Markina, just inland from the fishing ports of Ondarroa and Bermeo, where fish landed from the Bay of Biscay are prepared fresh rather than frozen. Traditional hand preparation remains central to the company's philosophy, combining skilled craftsmanship with modern quality standards to preserve the integrity of every fish.
